Do you like Mexican food? Well, yes, a lot of Indians love Mexican dishes because of certain similarities in the cuisines. Mexican food is popular for its rich flavours and we simply can’t deny that. Rice, being widely consumed in both regions, is prepared a bit differently through a variety of dishes. While Indians make pulao with a bunch of traditional spices, there’s something known as Mexican rice as well cooked with other variations. And it’s never a bad idea to play around with ingredients and try different recipes that tingle our tastebuds. So, if you have some leftover rice at home and you wish to eat something truly appetising, we suggest you should go for a quick bowl of Mexican rice. You don’t have the recipe? Worry not. Chef Kirti Bhoutika who was also the winner of the prestigious Masterchef India Season 5, shared a recipe on Instagram.

For the caption, she stated, “This quick Mexican rice is literally my saviour when I want to eat something yummy but only have like 10 minutes in hand! Make this for lunch tomorrow and tell me how wassss!”
Ingredients
Olive oil – 2 tablespoons
Finely chopped garlic – 2 tablespoons
Finely chopped onion – ¼ cup
Tomato puree – 1/3 cup
Tomato ketchup – 2 tablespoons
Salt
paprika powder
cumin powder
oregano
chilli flakes
coriander powder
Boiled corn ¼ cup
Chopped capsicum – ½ cup
Leftover rice – 2 cups
Finely chopped coriander – ¼ cup
How to make a quick Mexican rice bowl?
1)Heat a little bit of olive oil in a pan and put finely chopped ginger and onions. Sautee it for some time and put a flavourful tomato puree. Add some tomato ketchup as well. Mix well.
2) Now, you’ve got to put the different spices one by one. Add a bit of salt, paprika powder, cumin powder, oregano, chilli flakes and coriander powder. Mix it all very well.
3) Time to add some boiled corn and chopped capsicum. Blend it all nicely. Now, finally, add the leftover rice into the preparation and mix properly. Your Mexican rice is ready. You can put some fresh coriander leaves on top.
4) For garnishing, you can use sour cream, salsa and some cheddar cheese.
Kirti Bhoutika also shared some tips alongside the video so that you should know what to do or avoid while following the recipe. She mentioned the following points:
1)Make sure you dry out the tomato purée as much as possible before adding the rice.
2) Don’t try this recipe with overcooked rice.
