Chef Monish Rohra is the culinary whiz behind this wonderful Gatte ki Sabzi recipe and he has shared it exclusively for you, dear readers!
Gatte Ki Sabzi or ‘Gattu Saak’ is a recipe which uses soft, crumbly Gatte as the main ingredient. Although readymade gatte are available in the market, they can also be made at home from scratch with a few simple ingredients. Simply take some besan or gram flour and then paired with spices such as crushed coriander seeds, hing or asafoetida, baking soda, saunf or fennel seeds, ajwain or carom seeds, red chilli powder and salt. Mix the dough and cut it into small cylindrical pieces before boiling it in water for 5-7 minutes.
Coming to the gravy of Gatte ki Sabzi, it is an easy and no-fuss preparation which uses whole spices such as red chilli for a spicy zing. One key feature of Rajasthani preparations is that they use curd as a base for quite a number of dishes such as Kadhi and Mangodi. Gatte ki Sabzi as well has a whisked curd base which gives it a creamy yet tangy taste which is unlike anything you would have to ever tried before. Here Is The Full Recipe Text Of Gatte Ki Sabzi aka Gattu Saak:
Ingredients:
- 2 cups gatte
- 1 tbsp of garlic mince
- 2 dried whole red chilli
- 1 green chilli sliced
- 5-6 curry leaves
- 1 cup of whisked curd
- 1/2 tsp turmeric powder
- 1/4 tsp red chilli powder
- 1/4 tsp coriander powder
- Salt to taste
- 4 tbsp Oil
- Water as required
Method:
- Heat oil in a pan and add garlic mince, green chilli, dried whole red chilli, curry leaves and sauté till they turn slightly brown.
- Add a little bit of water and stir.
- Add the whisked yogurt, turmeric powder, red chilli powder, coriander powder and mix well.
- Add the gate and cook for 5-8 mins and add salt to taste.
- Serve with naan or roti.
