Ravioli recipe: Make easy spinach and cheese ravioli at home.
Italian food on your mind? Don’t go back to making the usual pizza pasta; you must have made it tons of times, anyway. Think beyond the usual, and try creamy and cheese ravioli this time. First things first, let us make it clear that making ravioli is as easy as making other Italian dishes like pasta. Instead of using a range of vegetables, this recipe anoints spinach as the only star ingredient, besides cheese, of course. Spinach or palak alone is enough to bring a bang of flavours and complement cheese in this ravioli recipe.
We will make wonton sheets/ravioli wrappers from scratch, which is unbelievably easy to make. Stuff the sheets with a filling of onion, spinach and cheese and boil the ravioli for a few minutes. Pour white sauce or red sauce or pink choice over the ravioli and serve. That’s about it! In this recipe, we will make ravioli in simple white sauce.

Spinach And Cheese Ravioli Recipe –
Ingredients –
(Makes 4-5 raviolis)
Half cup sooji
1 tbsp butter/oil
Salt to taste
2 cups chopped spinach
Grated cheese
Half onion, chopped
Half tbsp. ginger-garlic paste
Oregano to taste,
Red chilli flakes to taste
Salt to taste
For the white sauce –
2 tbsp all-purpose flour
2 tbsp butter
11/2cup milk (approx.)
Method –
Step 1 – Knead the dough with sooji, butter, salt and water. Cover and let it sit for at least half an hour.
Step 2 – Boil chopped spinach in water with some salt and a teaspoon of oil for 5 minutes.
Step 3 – Heat oil in a pan, saute onion and garlic, add spinach, some salt, red chilli flakes and oregano and cook the spinach for a couple of minutes. Add grated cheese and mix well. We suggest Parmesan or Cheddar cheese but you can add any cheese you like. Also, remember, if you are adding Parmesan cheese, skip adding any salt in the recipe because this cheese is already quite salty.
Step 4 – Roll small round rotis from the dough (1/4th of regular roti size). Place a spoonful of spinach and cheese mixture in the centre of a roti/ravioli wrapper. Cover it with another wrapper. Close the ends with marks of fork teeth. Transfer the raviolis is a pot of boiling water and let the raviolis boil for 10-12 minutes.
Step 5 – While the ravioli is boiling, make white pasta sauce. Heat butter in a pan, roast maida till it changes colour. Now, add milk. Wait till the milk boils while stirring regularly and turn off the stove. Add grated cheese according to your preference.
Place ravioli in a bowl and pour white sauce over it. Garnish with some coriander leaves and more cheese and chilli flakes, if you like, and serve hot! This spinach and cheese ravioli is so easy to make and delicious, you’ll forget about your other favourite Italian dishes for some time.
