You can also top it with sev, dahi, chopped, tomatoes, onions, coriander and sonth chutney and build your own DIY chaat. For the crispy papdi, all you need to do is make a batter of maida, sooji, besan, salt, ajwain, red chilli flakes, pasta seasoning (optional). Mix the dry ingredients with oil. The add the grated potatoes, mix until you get a nice dough. Rest it for five minutes. Roll out the dough in small round circles. Do not roll them too thin or keep it too thick. Fry it and your papdi or mathri is ready!
