A popular rice pudding – this phirni is prepared by blending almonds, milk and rice. The rice and milk give it a chewy texture, while the almonds and cardamom powder add the right amount of flavour to this recipe. This badam ki phirni is creamy and oh-so-delicious! To begin with the recipe, first, finely chop the almonds and keep aside. Soak the rice for 15 mins. Now, grind to a paste using little water. Next, add milk to a pan for boiling. Add sugar and cardamom powder.
Once it boils, lower the heat and add almonds. Cook for 2 mins and then slowly add the rice paste. Keep stirring on a low flame till the milk thickens and coats on the back of a spoon. Remove from flame, add gulab jal and pour in small containers. Refrigerate and serve cold. Badam ki phirni is ready!
