The month of Saawan sees one of the most important Indian festivals – Teej. This year, Hariyali Teej falls on July 31, 2022. Women across the country, especially north India, celebrate the festival by worshipping Lord Shiva and Goddess Parvati to seek their blessings for a happy married life. They apply henna on their hands, visit their parents who gift the daughters some goodies, including mithai. Just like any other Indian festival, food plays an important part in Teej celebrations. While ghevar is the flavour of the month and also Teej, there are other foods like balushahi, shakkar para and anarsa that are popularly savoured on this day. 

Here we bring you the recipe of lesser-known anarsa ki goli, which is a speciality in Bihar and Jharkhand during the Teej festivities. Anarsa is a deep-fried fritter made with rice flour and decorated with sesame seeds. The crispy and crunchy anarsa ki goli makes for the perfect dry sweet that can be exchanged between family members on Teej.

This Bihar-special anarsa ki goli can be easily prepared at home with a few common ingredients. This crispy snack and a hot cup of tea make the perfect team to give us a mouthfeel during the monsoon.

Assemble rice flour, gur ka shakkar, ghee, curd, sauf, sesame seeds and meetha soda. First, add some ghee to the rice flour and mix in saunf, curd, shakkar and soda. Knead to make dough and let it rest for some time. Then turn the dough into small balls, deep fry them in ghee and let them cool down to the room temperature.
