The secret to her recipe is that rather than using just besan to prepare dhokla, she also adds powdered sooji to get the right texture. Sooji-Besan Dhokla Recipe: How To Make Fluffly Dhoklas At Home

Whisk a smooth and thick batter with besan, fine sooji, turmeric powder, salt, hing, green chilli paste, grated ginger, sugar and sour yoghurt. The sourness of the curd and the fine sooji will make the dhokla batter fluffy and soft. You can also use buttermilk instead of sour yoghurt. At this stage, the batter will be thick and difficult to mix and you’ll need to pour water. Add some drops of oil as well. Let the batter rest for a few minutes. Steam the batter for 15 minutes and dhokla is ready! Add a tadka of oil, mustard seeds, green chillies and curry leaves.
