Cafe Boulud in Palm Beach is offering a variety of summer cocktails, one of which features an aromatized bubble on top.

A variety of cocktail garnishes — including olives and citrus twists — have long been in evidence at Café Boulud, but here’s a new one: an aromatized bubble.

It’s an orb that sits snuggly atop a new summer drink called Pear’fume. When the bubble pops, it releases a fragrance, in this case of citrus and pear.

The bubble is created with a cocktail device called the Flavour Blaster (flavourblaster.com), which mixologists now have on hand at Café Boulud (cafeboulud.com/palmbeach).

Sure, the Pear’fume drink could be garnished with, say, a pear slice, but the idea “is to create a playful, fun and interactive cocktail experience,” said Café Boulud manager Lucian Puscasu. “A little fun is always welcome in summer.”

Pear’fume — a blend that includes pear vodka, Italicus rose petal liqueur, lemon juice and simple syrup — is among the cocktails Café Boulud is featuring this summer.

The Summer in Milano, a newfangled version of an Aperol Spritz, comes complete with a smoky rosemary sprig that is ignited just before the cocktail is served.

“Very few things” are as reminiscent of summer afternoons in Italy as “a refreshing Aperol-based cocktail,” Puscasu said of Summer in Milano, which includes such ingredients as Aperol, Pisco, Suze Liqueur and grapefruit and yuzu juices.

Puscasu is part of a team that conceived of Café Boulud’s summer cocktails. Mixologist Hamza Ghord and Vincent Bodiou, whose official title at the restaurant is culinary experience designer are the other team members, Puscasu said.

Cocktails at Café Boulud typically fall under three categories — or “muses,” as the restaurant calls them: taste, travel and tradition. The bubble-topped Pear’fume fits the taste category and Summer in Milano is travel-themed, Puscasu said.

Other new summer cocktails include Jardin Vert, which fits the taste or tradition theme because of the seasonality of some of the pale-green cocktail’s ingredients, including green melon and dill.

Jardin Vert combines cachaca, bergamot liqueur, Midori, lime juice, dill-infused simple syrup and rhubarb bitters.

Café Boulud’s summer cocktails are priced from around $15 to $18. Non-alcoholic cocktails are available for around $10, Puscasu said.
